PURPLE PUREE

I am reading "The Sneaky Chef" and am seeing ways to include extra healthy foods into my normal food.  This is a puree that can be added to pretty much anything.  I will try it with my oatmeal and maybe shakes.

INGREDIENTS
3C raw baby spinach leaves
1.5C fresh or frozen blueberries
1t lemon juice
3-4 T water

DIRECTIONS
1.  Bring spinach and water to a boil in medium pot.  Turn heat to low and allow to simmer for 10 minutes.
2.  If using frozen blueberries, quickly rinse them under cold water to thaw a little, then drain.
3.  Combine the blueberries, spinach, lemon juice and 2T water in food processor, on high.

**This makes 1C of puree.  It will store in the refrigerator for up to 2 days.  You can freeze 1/4C portions in sealed plastic bags or small plastic containers.**
