This is a delicious twist to normal banana bread.
INGREDIENTS
1 cup fresh blueberries
1 5/8 cups all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tsp vanilla
1/2 cup apple sauce
1 cup white sugar
2 eggs
1 cup mashed bananas (3 bananas)
DIRECTIONS
1.Preheat oven to 375 degrees F. Grease and flour a 9x5 inch loaf pan.
2.In a medium bowl, dredge blueberries in 2 tablespoons flour. Gently stir blueberries together with oats, 1 1/2 cups flour, soda, cinnamon, nutmeg, and salt.
3.In a large bowl, mix applesauce and sugar. Add eggs one at a time, beating well after each addition. Stir in mashed banana and vanilla. Add blueberry mixture to mixture, and stir just until moistened. Spoon batter into the prepared pan.
4.Bake for 30 minutes at 375 and then 35 minutes at 350, or until a wooden toothpick comes out clean when inserted in the center of the loaf. Cool in pan for 10 minutes. Remove from pan, and cool completely on a wire rack.
