S'MOOKIES

I made these a couple and they are delicious and easy.  They combine my love of smores with my love of peanut butter. 

INGREDIENTS
Cooking spray
Refrigerated Peanut Butter Cookie Dough

Filling:
1/2 cup chocolate chips
2 Tbs unsalted butter
1/2 cup marshmallow fluff

DIRECTIONS
1. Cook refrigerated peanut butter cookies according to package.  Let stand for 10 minutes, then place cookies in the refrigerator for 20 minutes.
2.  While cookies cool, place chocolate chips and butter in a double boiler until just melted. Let stand for 30 minutes, or until slightly stiff.
3.  Heat marshmallow cream in microwave for 10 seconds to soften. Spread marshmallow on a cookie, chocolate on another and sandwich together. Store finished cookies in the fridge.
