DAD'S MEATLOAF

This is a spin on my father's yummy meatloaf. It's super easy and I always serve it with homemade mashed potatoes and spinach.

INGREDIENTS
1 lb lean ground beef
1 egg
1 C Panko
1 small jar chunky salsa (we like Newman's Own)

DIRECTIONS
1. Mix the beef, egg, panko, and 1/2 jar of salsa in a bowl
2. Put meat mixture, in loaf form, on a greased cookie sheet and cover with some of the remaining salsa
2. Bake at 350 for 1 hour
